6 large eggs (organic)
1/4 cup chopped fresh parsley
2 cups scrubbed & diced zucchini
2 tbls. extra virgin olive oil
1 medium yellow onion scrubbed, peeled, and chopped
2 large cloves garlic, scrubbed, peeled, and minced
salt to taste
Beat eggs in a large bowl; add rest of ingredients, except oil, and mix. Heat oil in a large skillet; add egg mixture. Cook over medium-high heat until golden brown on bottom. Turn and cook other side until egg is set (Alternate: saute 2 cups fresh bean sprouts 1 minute, add this instead of zucchini or do 1 cup sprouts and 1 cup zucchini.) Pancakes or Frittatas can be made 2 different ways. You can either brown on both sides like pancakes as above, or pour mixture in oiled cast iron skillet. When the bottom in browned, take skillet off the stove and put on the broiler pan--broil until top is brown and puffy. Cut into wedges and serve.
